Day 11
Good Evening!!
Midnight is fast approaching so I’m going to try keep it short and sweet after a busy evening preparing for what is set to be an adventure over the next few¬†days¬†whilst I am in transit.
Breakfast
Miso soup with wakame, pumpkin and shiso sprinkle
Oat, amaranth and polenta porridge
Lunch
Green lentils with tekka, stir fried cabbage with sunflower seeds, steamed brocolli & stir fried courgettes and red pepper
Red bush tea with oat cream
Apple pudding
Dinner
Squash and onion soup (If you saute the onions for a long time before adding the squash it gives the soup a richer quality and is much sweeter…yum!)
Roasted salmon with cherry tomatoes, mixes salad leaves with a lemon dressing, grated daikon, pressed cucumber and chicory salad & sweet corn
Falafel (which I have made for tomorrow evening for dinner with a friend so of course, it was only right that I should conduct a taste test ;o) with a tofu & cucumber dip
Bancha tea
Apple juice
You might have noticed that I didn’t have any grains for lunch or dinner today. I just really felt like I didn’t want to have any so I didn’t! ;o)
